I’d probably just replace them because like mentioned earlier, there’s not much that “latches” into striker and pounding that straight and getting it right might not be worth the effort. Super cheap on RA.

Never had to look for a set, yeah not worth messing with if readily available and small money.

A little lubrication on the latches never hurt anything either. The easier the latch moves in and out the better it can fuller engage the striker. Every oil change should include lubricating door hinges, hood lock, and tailgate latches. Modern oil change people don't even know what a zerk fitting is

Not understanding your comment, if the engine quit running tomorrow, it would be a recent and new problem. It doesn't matter that it wasn't doing it before.
The gate falling open is the symptom,
Tail gate alignment, tweaked bed, tweaked gate, bad/worn gate hinges allowing side to side movement of the gate, tail gate handle bent inside gate from reefing on it not allowing the mechanisms to fully engage latches, bent latch allowing gate to disengage. Something's changed since you bought it.

Side to side gate movement, a buggered up latch, and a washboard road. pothole, etc. and you have your problem.

I said it simply as I can hoping you can understand. You have an obvious issue staring you in the face you don't want to accept as being part of the problem. Fix the obvious then check the next thing.
I agree something has changed but the placement of the latches is not what has changed.
@Caman96 looks like we have a different style of latch mine are a lot thicker and have the long bolts like the cable hooks to on top and bottom, sorry the pics aren't great I had to crop them down to get them to send. I do see what you are saying about the direction the tabs are facing.

It seems to me though that the plates on the outside of the tailgate would prevent the bed spread problem and the latches engage all the way to said plates.... At least when open, do theoretically the only way for it to come out would be for the latches to come in.....?

I completely disagree. Same parts for
1988-2000. Look at my pictures, cables are mounted on the bottoms. Yours are on the top. If you remove them and install so the circled tabs face to the rear, the cables will be on the bottom like mine. They ARE installed backwards.

You have them installed with tabs on the inside.

Cables definitely don’t want to mount to top side, they shouldn’t be draped in front of striker!
Picture from manual that @GoToGuy posted clearly shows correct orientation.

The cables are on the bottom on both sides. Agreed it looks like the striker is flipped, but they have been that way since before I got it
