That's really too bad, vehicle fires are terrible. It's a little late for this to be helpful to you, but here's how I've set up my insurance.
Bought my truck for $5200 a few years ago, dumped a bunch of money into it, and got it appraised. It doesn't quite cover what I've got into it, but pretty close. It's not insured as a classic, still my daily, but now my insurance company has to give me the appraisal value if it gets totalled. And my premiums actually went DOWN (I got a whopping $14 back) because my deductible went from $1000 to $2500, which is fine because I wouldn't claim anything lower than that anyways.
This is in Canada, and maybe not all insurance companies work like this, but hopefully it's helpful to someone.

You can make insurance find you a vehicle exactly like yours. If they can't then they have to pay you the replacement cost of a truck just like yours. That means same shape, model. Style. If you have receipts for all the parts on it. Even better. Don't settle for the 3k. Settle for a replacement of same condition. You get a lawyer involved they'll cut you a check that day. Read your policy fine print. It's in there. It's federal law
