There's really no sense in questioning the live stream data until you get the O2 sensor installed, connected, and working.

The ecm looks at engine temperature it wants to run at normal temp. As someotherguy said, without the O2 sensor it has data on fuel air ratio. During warm up and as the O2 sensor wakes up , it runs a fixed mixture program, on the rich side. The O2 sensor data is part of the ecm data to regulate air/ fuel mixture ratio.

These Data streams are with truck off.

This was after a fairly recent drive? Coolant temp seems high for a cold truck.
Battery voltage ok at battery? Looks a bit low at ecm...
Park/Neutral switch reading is odd? Shouldn't it say park?
