Over heating.. I’m stumped!

What plugs were checked? Replaced with what temp thermostat? What " water heater "? Not sure on fan shrouds?!? There around the fan attached to back of the radiator, look! What temp are you testing for around the radiator, and why around the radiator?
Have you done any of the diagnostic work recommended above? At least get a thermometer like this , remove radiator cap, stick the thermometer in the fill opening, start it let run watch the temp , does it match your dash gauge?

Truck home finally! They put a higher temp thermostat in 190. I guess factory is 160. It'll take longer to warm up. Cleared some buildup in carberatuer and lowered idle. I guess messing with air/gas flow and pcv valve tweaks with new thermostat was most of it. I didn't let it warm up long enough and it kinda started heating to 200/210 sitting at red-light and stop sign. Then I was able to drive on a straight away and I actually heard the thermostat open with a pop. It cooled all the way down the rest of ride home and stayed way low.

" rather than guessing , phone a friend on how to look up correct parts, like a 195° thermostat. What make carb' is it? Holley, Carter..?

Goodies thermal meter and read the temperatures from beginning of the radiator to the end of the radiator. Free temperatures coming from the thermostat top. Like somebody else said it might be riding your day just wrong but that thermal light meter would tell you.
