The other day my engine completely stopped in the middle of the road I pulled over and saw water coming out the air filter, throttle, and intake I pulled the oil cap and dipstick and saw the mix of oil and coolant and thought it was a headgasket but after some research I'm thinking it's the intake am I good to replace the gasket do an oil change and run it or should I replace the engine

Oof, that’s a terrible way for an engine to go. :(

There’s a few things, best case scenario yes, replace the intake gasket, do an oil change (or two) and you’re good to go.

What likely happened is one or more of the cylinders filled with liquid while the engine was running. Probably bent a rod or two. Could have busted a cylinder wall. Could have bent valves.

A compression check and leak down test will be good indicators. But before that, I would drain the oil pan, remove all the spark plugs and see if you can rotate the engine by hand. If not, then you’re looking at pulling the engine out

If it got hot enough to puke out of the intake, there's a very good chance you cracked your heads and/or block. You can fix the intake gasket, but keep an eye on the coolant level afterwards. My Suburban lasted another couple years after suffering a massive overheating event. I lost the upper intake manifold gasket while towing through a construction zone in Lawrence, KS. I had to limp it three miles before I could pull over. After that it sipped coolant pretty steadily. I finally rebuilt the engine with heads that had been magnafluxed, but I didn't magnaflux the block. It was pushing combustion gas into the cooling system.

Pull plugs, rotate test, drain oil, compression check, differential compress check. What damage assessments,? Don't be surprised to find gaskets blown out resulting in coolant leaks, head, intake. Worst case cracked heads, cracked block. Do the basic tests first, then follow where it leads.

I've rescued Cadillac engines that went down in salt water in airboats. Filled them full of fresh water to wash out the salt water, drained them well and did a few oil changes. They went on to catch fish for years after.

How did you go about draining them to get all the salt out

I bought back my sisters V6, a few oil flushes and a few filters in quick sequence and a LOT of smoke when starting. No water got into the cylinders.
