can I keep my gears in the rear diff when I get it sandblasted?
As long as the cover is on and the axle tubes aren't open, I can't see why not.
If it's open to the world, unless you are changing them out, probably not such a good idea.

Block the vent, too.

I would be very reluctant to sandblast an axle. Once the axle seal(s) or pinion seal are eroded, you've got sand inside the axle, and then bad things happen.
